Sausage Paprikash

Sausage Paprikash—Hungarian Style Vegetable & Sausage Stew:

Ingredients:

2 tablespoons chopped onion

2 cloves chopped garlic

¼ cup extra virgin olive oil

Assorted fresh, seasonal vegetables (selection & amount as desired)

Fresh or dry parsley (1/2 cup fresh; or 2 tablespoons dry)

Fresh or dry basil (1/4 cup fresh; or 1 teaspoon dry)

Pinch of dry rosemary powder

Pinch of dry thyme

¼  teaspoon Turmeric

¼ teaspoon red sweet paprika

Pinch of ginger powder

Package of (4) organic chicken or turkey sausage (Andouille if spicy is desired, Mild Italian for less spicy)

Spring water as needed

 

Cooking Instructions:

Sauté chopped onion in olive oil for 1 minute

Add chopped garlic & sauté for 30 seconds

Chop vegetables into bite-size chunks & add to the sauté—stir & blend well

Mix herbs & spices & sprinkle on top of veggies

Add 1 cup of water, cover pot & simmer

Rinse & cut sausages into bite-size slices & add to the veggies; stir well, add more water if necessary, cover pot & cook until sausages are plumped & veggies are al dente

Refrigerated dish keeps fresh for up to 7 days—with flavor becoming richer with time

Number of servings depends on amount of vegetables included & sausage slices consumed per person
